As the sun was sinking on another lovely early summer day, I popped open Saladini Pilastri Consenso Rosato 2010 to accompany our relaxing on the patio and the grilling of summer squash, red potatoes, bison burgers for my husband and veggie burgers for myself. Count Saladini Pilastri began his vineyards 3 centuries ago, and since then the land has always produced wine. The villa and vineyards are located on gently rolling hills that overlook the Adriatic Sea; the house dates back to the 1400’s. Certified organic since 1998, sustainable farming is also practiced, furthering their philosophy that “the flavor of the wine unites the perfumes and colour of the land”.
Eye-catching coral-cherry in colour, faint aromas of cherry blossoms and rose buds lingered in my glass. Bright flavours of strawberry, cherry and tart apple were underscored by a refreshing acidity in the light body. Citrus zest and traces of stony minerals were invigorating in the clean finish. Light and crisp, this is a refreshing glass perfect for summer sipping.
