Superstitions are rampant this time of year as people around the world get ready to ring in the new year. In Italy, for example, eating lentils is said to be good luck. Lentils are traditionally served with cotechino sausage for the New Year. For best results, use the firm, brownish-green lenticchie del Castelluccio, an IGP protected lentil grown in the provinces of Le Marche and Umbria in central Italy. This variety of lentil remains firm when cooked but has a tender skin, and an exceptionally earthy, sweet flavor.
